This Pork Parmesan Recipe is a crowd pleaser. It tastes great; takes a little time to prepare; and it is perfect for any occasion.

Although itโ€™s chicken counterpart (chicken Parmesan) is more popular, Pork Parmesan proves that it can be a favorite, if given the chance. The good thing about this dish is that you can choose the part of the pork that you will use. I go for the leaner part because it is low in fat and cholesterol, but donโ€™t let my choice influence your decision โ€“ use the cut of pork that you like, say pork chops or belly.

We will pan fry the pork before we bake it. The outer part of the pork โ€“ which is composed of the breading, needs to be somewhat crisp in order to achieve a good texture later on โ€“ that is why we need to pan fry it. Baking the pork will cook it completely.

I prefer to use Panko bread crumbs because when making pork or chicken parmesan because it gives me the consistency and texture that I always wanted. If you will be using the same ingredient, make sure that you pan fry in low to medium heat as the bread crumbs tend to burn easily. This will make your dish achieve a nice golden brown color at the end.

Ingredients

  • 2 lbs. pork loin chops
  • 1 cup Panko bread crumbs
  • 1/4 cup all-purpose flour
  • 2 eggs beaten
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 15 oz. can diced tomatoes
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon Italian seasoning
  • 1 cup shredded quick melt cheese
  • 1/4 cup olive oil

Instructions

  • Rub salt and pepper on the pork loin chops. Let it stay for 10 minutes.
  • Heat the oil in a frying pan.
  • Dredge pork loin in flour and then dip in beaten egg. Dredge in Panko breadcrumbs. Make sure that the pork is properly coated.
  • Fry each side for 3 minutes. Set aside.
  • Meanwhile, preheat the oven to 350 degrees Fahrenheit.
  • Arrange the fried pork loin in a greased baking tray. Bake for 15 to 20 minutes.
  • While baking the pork, make the sauce by boiling the diced tomatoes in a saucepan.
  • Add oregano, basil, Italian seasoning, plus salt and pepper to taste. Stir and simmer for 10 to 12 minutes or until the sauce thickens.
  • Remove the baking tray from the oven. Pour about 2 tablespoons of tomato based sauce over the baked pork and sprinkle cheese on top.
  • Put the baking tray back in the oven. Bake for 5 minutes more.
  • Transfer to a serving plate. Serve.
  • Share and enjoy!
